CARAMEL POPCORN. YES.

I mentioned that the Bennett-Clarks are strict organic eaters, and Mica and Mom are even stricter vegetarians. This has left us with less obvious food choices and the task of hunting for more. It turns out that being unable to eat things like Kraft Dinner and delivery pizza has simply given us more food options, and once in a while, maybe once a month or so, I’m going to tempt you with some of my favourite recipes. I’m not an avid cook like Dad or my sister Sepia, so most of these will be simple little snacks I whip up before a movie marathon with my family or for a school lunch.

Dad’s bible is an updated 9^th edition of The Encyclopedia of Country Living, an Old Fashioned Recipe Book by Carla Emery. It sits in a place of glory on the kitchen counter. It’s not an organic cook book, but we’ve been at the game long enough that we swap in our alternatives and voila! We don’t live in the country either, at least not the more-cows-than-people-country (though we have a dozen laying hens), so for relatively suburban folks my parents know a lot about raising animals and whatnot from Ms. Carla. Well, they would tell you they know a lot about everything, but you know how parents are.

So here you go! Treat yourself to an easy-peasy bowl of caramel popcorn.

Ingredients:

• 1/3 cup honey (my Uncle Hart has a rather large hobbyist beekeep, but check out local beekeepers, you might be surprised!)
• 3/4 cup brown sugar (or mix regular sugar with some molasses)
• 2 tablespoons margarine (we buy homemade butter and use it sparingly, so I usually make do with a little less)
• 1/3 cup popcorn kernels

Instructions:

• combine honey with brown sugar and margarine
• heat in saucepan until sugar is melted and bubbling at edges
• meanwhile, pop your kernels in an air popper or over an open fire (if you’re feeling really authentic)
• pour the caramel mixture over your large bowl of popped popcorn, salt it, and mix well
