CARAMEL POPCORN. YES.

I mentioned that the Bennett-Clarks are strict organic eaters, and Mica and Mom are even stricter vegetarians. This has left us with less obvious food choices and the task of hunting for more. It turns out that being unable to eat things like Kraft Dinner and delivery pizza has simply given us more food options, and once in a while, maybe once a month or so, I’m going to tempt you with some of my favourite recipes. I’m not an avid cook like Dad or my sister Sepia, so most of these will be simple little snacks I whip up before a movie marathon with my family or for a school lunch.

Dad’s bible is an updated 9th edition of The Encyclopedia of Country Living, an Old Fashioned Recipe Book by Carla Emery. It sits in a place of glory on the kitchen counter. It’s not an organic cook book, but we’ve been at the game long enough that we swap in our alternatives and voila! We don’t live in the country either, at least not the more-cows-than-people-country (though we have a dozen laying hens), so for relatively suburban folks my parents know a lot about raising animals and whatnot from Ms. Carla. Well, they would tell you they know a lot about everything, but you know how parents are.

So here you go! Treat yourself to an easy-peasy bowl of caramel popcorn.

Ingredients:

  • 1/3 cup honey (my Uncle Hart has a rather large hobbyist beekeep, but check out local beekeepers, you might be surprised!)
  • 3/4 cup brown sugar (or mix regular sugar with some molasses)
  • 2 tablespoons margarine (we buy homemade butter and use it sparingly, so I usually make do with a little less)
  • 1/3 cup popcorn kernels

Instructions:

  • combine honey with brown sugar and margarine
  • heat in saucepan until sugar is melted and bubbling at edges
  • meanwhile, pop your kernels in an air popper or over an open fire (if you’re feeling really authentic)
  • pour the caramel mixture over your large bowl of popped popcorn, salt it, and mix well

I’m off to watch THE HOBBIT with the family and our sticky-sweet popcorn. Have a lovely Easter weekend! Feel free to tell me about any Easter traditions you have.

Cheerio!

Hi Storm! Your popcorn recipe sounds wonderful! I will definitely try it sometime soon. As for Easter traditions, I can never let an Easter go by without decorating eggs. I think I’ve mentioned before that while I’ll be twenty-seven this month (rabbit, rabbit!), I am a child at heart. Egg decorating is one of many things I will never grow out of.
The weekend before Easter, I decorated eggs with two old friends. One I know from high school and the other I’ve been friends with since third grade! We had a great time eating Easter candy and egg salad sandwiches and later decorating eggs. As for Easter weekend, last night my dad and I had a lovely Easter dinner of lamb and a nice chat about what our spiritual beliefs are (we’re Unitarian Universalists; I’ll tell you more about that later if you like).
In terms of my new blog, here is the web address: http://thestoryfairyslibrary.wordpress.com/. There’s nothing on it yet, but soon I will be posting everything from my fairy tale blog and later my writing blog on it. Please follow the blog, and as I add old posts to it, please tell me which posts you like best and what you would like to see more of in the future. That will help me decide what my first new posts on Story Fairy’s Library (the new blog) should be. Thanks, and take care! 🙂

It sounds like you had a wonderful Easter, Lily. I’ve never been one for decorating eggs. I’m too clumsy and end up dropping them! …I have to say I’ve not heard of Unitarian Universalists…
I’ve followed your blog and I’ll try to pop over whenever I can.
      Cheers!
      Storm 🙂
